‘We’re a big, sociable family, cooking for a lot of friends and family. And we eat a plenty of rice dishes. So it makes sense to cook using a combination of gas and our "hot box", as it cooks rice perfectly. When I was growing up, my mother used to call it a “wonder box”, and that is certainly what it is. When I was at university my father gave me a book on wonder box cooking, and in the late '70s I worked on a fuel- and labour-saving project in the Transkei with a group of rural women – and we used this ‘technology’ there, too. That’s what I love about our hot-box: it’s low-tech, cheap and very efficient.’
